I am beyond excited to be participating in my very first What I Ate Wednesday! I’ve been watching the fun for a couple of months now and have wanted to join in, but I can never seem to remember to get pictures of what I’m eating throughout the day. But, since I was off on Monday, it seemed like a perfect day to make sure I kept my phone on hand and snap some pics! So, here we go!
Breakfast: An egg (almost always over medium), a slice of turkey bacon, and some grapes
Snack: Almond and Carrots
Lunch: Split Pea Soup – I make a bunch at a time and keep it in the freezer
Afternoon Pick-Me-Up: Nonfat Latte from Starbucks (not pictured)
Dinner: Grilled Salmon with a TexMex rub, Grilled Asparagus (N says he marinated them in balsamic vinegar, soy sauce, lemon zest, olive oil, salt & pepper for a few minutes before grilling), and Lime/Cilantro Quinoa
Dessert: Chuao Milk Chocolate Potato Chip bar (we split these up so we share about a 1/3 or a 1/4 of a good chocolate bar for dessert each night and also, unfortunately, not pictured)
It was definitely fun keeping track of what I was eating for the day! I’m looking forward to participating in another WIAW soon!
