I can’t remember where I first heard about the VegWeek Challenge, but as soon as I saw it, I knew I had to do it. VegWeek is sponsored by Compassion Over Killing and the purpose is to raise awareness about the benefits of a plant-based diet for health, the planet, and animals. Today, Earth Day, is the kickoff and it runs through the 28th.
When I mentioned it to Nathan, he immediately jumped on board. Since he is participating as well, that means my Monday-Friday should go a lot more smoothy. And, since we have a lot of good vegetarian recipes in our arsenal, we come well-equipped. That being said, I am definitely planning to try some new things!
However, on Friday I will be heading up to DC to do some wedding dress shopping with my mom and sister. That will definitely present more challenges. I’ve already talked to my mom about it and she has one dish already in mind to make for me. 🙂
So, I’ll be updating throughout the week with lots of pictures. I’m really excited about taking this on!
