What I Eat on a Sick Day

Let me start off by saying that summer colds suck. Big time.
When I have a cold, all I really want to eat is soup. Most of the time this works pretty well, because I try to keep a good soup supply in my freezer. But, let’s be honest, it’s summer. I don’t want soup quite as often, so my supplies are a little low. I have some carrot ginger yam and split pea in the freezer, that’s it. So yesterday, when all I wanted was soup and didn’t even want to deal with defrosting any, I hit the takeout. Hard.
Breakfast: Normal. Egg, turkey bacon, half a grapefruit
Morning Snack: Honey Chobani with some granola and a banana (I was hungry)
Lunch: Chicken Soup from one of my favorite places for authentic tacos and tortas – If you haven’t had Chicken Soup from a Mexican restaurant I highly recommend it. This is how I picture them making it: put some rice in a bowl, top it with chunks of chicken breast meat, add some pico de gallo, fresh avocado, and cilantro, then cover it in broth. I have no idea if that is how they actually put it together, but I love it!
Dinner: More take-out! I wanted Hot and Sour Soup. Our favorite local spot for Hot and Sour is closed for construction right now, so we settled for P.F. Chang’s. I devoured the soup and half of the steamed dumplings, but I barely made a dent in the Singapore Street Noodles. Since Nathan is gone from now through Friday, I think I will let the leftovers save me from having to cook!
