WIAW: Food Rut

I think I might be in a food rut. Dinners are great, but I am starting to feel like I’m eating pretty much the same thing every day for other stuff. We’ll be on vacation next week, so we’ll shake things up a bit (wait until you see the menu). Maybe that will shake me out of my food funk.
Also, we’ve been traveling so much that I haven’t had a kitchen Sunday in a while. I feel like I need it, but again, that’s going to have to wait. Such is life!
Here’s what I chowed down on yesterday:
Morning: The usual egg and turkey bacon (not pictured) with half a grapefruit for breakfast. I had half of a Vega bar for a snack before I began a training I had to teach yesterday and then I had a plain Greek yogurt, with a little honey added, and a banana (not pictured) as my other morning snack. I know, it’s a lot of food, but even with increased water intake I’m still feeling hungry all morning.
Midday: Lunch was one of the leftover sweet potato burgers from last week’s dinner plan with a simple salad of spinach, arugula, bleu cheese, and sliced almonds dressed with balsamic vinegar and olive oil. I also partook of some cherries (not pictured). About 3:00, I dug into my afternoon snack of string cheese, some trail mix, and a peach.
Dinner: Mahi with roasted corn salsa and a salad. This was supposed to be cooked with grilled salmon, but we got to Earth Fare so close to the end of the salmon sale, that they were completely out, so we punted. On top of that, there was a bunch of rain in the forecast for last night, so we ended up roasting the corn in the oven and cooking the fish on the stovetop. It still made for a very tasty dish! Dessert was 3 small squares of Green and Black’s Hazelnut and Currant dark chocolate bar (also, not pictured).
I can’t believe I forgot to take pictures of so many things! How does everyone else remember to snap photos throughout the day when you are logging food for What I Ate Wednesday?
