Soup Panic and Weekly Meal Planning

I am completely out of soup in my freezer. This fact kind of stresses me out. Soup is my go-to lunch, so not having stocked away makes me feel a little like I might end up eating lunch out every day this week. However, since it is grocery shopping day, I decided it should also be soup-making day. I’ll start with one batch today, and over the next couple of weeks I’ll make some more so the freezer is fully stocked once again. The fortunate thing is that I’m not in dire straits for soup. It’s summer and that means eating a lot of salads for lunches. Thank goodness!
Here’s what we’re cooking up this week:
Soup of the Week: Creamy Cauliflower Soup (bonus, it’s vegan!)
Dinners:
Argentinian Pork with Baked Sweet Potato and Asparagus
Grilled Salmon Salad (maybe Nicoise style?)
Tempeh and Broccolini Stir-Fry
I only selected three meals this week, because we are eating out for dinner tonight to celebrate Father’s Day with Nathan’s dad. Then, we’ll leave town on Friday afternoon to hit my family reunion in South Carolina. There will be plenty of Southern food to feast on there, so I’m not stressing about eating super healthy while I’m there. Personally, I can’t wait to have some of my Grandma’s fried chicken!
