What I Ate Wednesday: Ice Day

I’m happy to be working on getting into the swing of What I Ate Wednesdays!
Yesterday, wasn’t a typical day. We had yet another, but minor, ice storm. After the school system called for a 2-hour delay for central office, I decided I would rather take the day to stay at home. I still worked, but I got to do it from the comfort of my home office while wearing pajama pants and a hoodie. I may have even snagged some time in the morning to paint my toenails in hopes that spring weather will be here to stay before too much longer!
I did stay in bed normal than longer, so I didn’t have my usual breakfast with Nathan. Instead, I scrambled an egg with an extra large handful of baby spinach and segmented a grapefruit to go with it. Lunch was leftovers from Saturday, blackened chicken with lime-cilantro quinoa and avocado cream sauce. For dinner, we had pan-seared mahi topped with an avocado-mango relish and spinach salads with strawberries and bleu cheese. Lately, I’m into dressing that kind of salad with just a drizzle of this amazing olive oil we bought on our honeymoon to Spain and a little bit of balsamic vinegar. For dessert, I had a Guinness and a square of lemon and black pepper chocolate. I’m not so crazy about the chocolate, but we really like to find interesting combinations we haven’t had to see what we think.
Of course, as always, I snacked. The good news is yesterday’s snacks were my regularly scheduled snacks and nothing extra! I had some yogurt drizzled with honey and a banana in between breakfast and lunch and a few almonds and grapes mid-afternoon. I drank a ton of water to keep the tendency to snack at bay.
All in all, a really great day in food!
